BBQ Lentil Sloppy Joe’s

Poppy wasn’t the only one who was a fan of these bbq lentil sloppy joe’s on gluten free buns last night. We’ve been doing our best to make each part of the day seem a little different while we’re at home. We enjoy breakfast at the counter, lunch in Poppy’s room at her table, and dinner recently has been on the patio! It has been so fun, and much needed, using our little space in so many different way. Very thankful for the sunshine the last two weeks because Poppy and I were getting very stir crazy.

Vegan BBQ Sauce:

  • 1 large onion, chopped
  • Garlic powder to taste (you can use raw garlic but I prefer garlic powder)
  • 1 cup tomato sauce
  • 3/4 cup water, divided
  • 1 tbsp balsamic vinegar
  • 1 tbsp molasses
  • 1 tsp smoked paprika
  • 1/4 tsp chili powder
  • 2 tsp coconut aminos
  • 1/3 cup maple syrup
  • 2 tbsp apple cider vinegar
  • 1 tsp pink Himalayan pink salt
  • Black pepper to taste
  • 1/8 tsp cayenne peppe

Directions:

  • Add the chopped onions and garlic powder to a heated pan on medium heat with a little nonstick cooking spray and sauté until golden. Using about 1/4 water if the onions begin to stick to the pan.
  • Add the remaining ingredients and bring to a boil. Once boiling, reduce to a simmer for 3-5 minutes or until the liquid reduces a little.
  • Remove from the heat and let cool slightly before adding to a blender to blend until smooth. Store in the fridge for up to one week!

BBQ Lentil Sloppy Joe’s:

  • 2 cups cooked lentils
  • 1/2-3/4 cup homemade vegan bbq sauce
  • 2 gluten free buns
  • Pickles, optional but hugely recommended

Directions:

  • Heat the lentils on the stove top with the bbq sauce until warm. Toast your gluten free buns in the oven on broil for a few minutes and stuff with half the bbq lentil sloppy joe mixture and a couple pickles, enjoy!

Gluten Free Bread Pudding Cups

Gluten Free Bread pudding: making this gloomy day in LA cozy. 😌🌥🍞

There’s no greater smell than fresh gf bread pudding straight outta the oven. Made with gf bread, vanilla Ripple Foods half & half, nutmeg, and so much more. Baked with sliced pear on top and eaten with a dollop of coconut yogurt. Another pregnancy craving satisfied with good for you ingredients all while tasting incredible. 🤰🏻🍨

Ingredients:
  • 8 slices Canyon Gluten bread, chopped into small cubes
  • 1 cup Ripple Foods Vanilla Half & Half
  • 1 egg and 2 egg whites, lightly beaten
  • 1/3 cup maple syrup
  • 1 tsp. vanilla extract
  • 1/2 tsp. ground nutmeg
  • 1 tsp. cinnamon
  • 1 pear sliced into 1/4′ thick pieces
  • 5 tsp. honey

Directions:

  1. Spray five large muffin spots with cooking spray (or ten regular size muffin spots). Add bread cubes evenly to each spot.
  2. In a medium sized mixing bowl, whisk together half & half, eggs, maple syrup, vanilla, nutmeg, and cinnamon until well combined.
  3. Pour wet mixture over bread cubes, pressing down on them to ensure that they soak up the liquid Let sit for at least 15-20 minutes, checking regularly to make sure the bread cubes are getting spongy.
  4. Preheat oven to 350F.
  5. While bread cubes are soaking, prepare your pears by adding cooking spray and pear slices to a skillet over medium-low heat and cooking until tender, sprinkle with nutmeg. Remove from heat and set aside.
  6. Place pear slices over bread cube mixture, distributing evenly and drizzle a teaspoon of honey over each.
  7. Bake for 40-45 minutes, or until pears are golden brown and egg mixture is set.
  8. Remove from oven and serve. Top with vanilla yogurt, whip cream, or enjoy as-is.

Sammie Smackdown – When Pigs Fly

Life is like a sandwich, you have to fill it with the best ingredients.”

Sandwiches! I’ve yet to meet someone that doesn’t love a sandwich. There’s something comforting about two pieces of bread (toasted preferably) filled with goodies. Sandwiches are lovable for multiple reasons; convenience, versatility, comfort, mess-free (exception of the drippy-egg), and endless combinations. This is why I literally ran to the kitchen after Canyon Gluten-Free Bakehouse asked me to create an epic sandwich for their Sammie Smackdown competition. The opportunity to put my “Strange but Good” kitchen skills to the test could not be missed!

The Canyon Bakehouse Sammie Smackdown campaign is more than mouthwatering sandwiches. The Sammie Smackdown allows four gluten-free bloggers like myself to create their tastiest sandwich ever to compete for fan votes! The blogger with the winning sandwich will receive a $10,000 donation to their charity of choice. In choosing a charity, I wanted it to pertain to my life.

Growing up I competed in scholarship pageants. Enhancing my social skills onstage and in interviews, personal growth, becoming involved in my community, and being awarded educational funding were just a few of the many aspects of scholarship pageants. The Council for Youth Empowerment (CYE) believes that young people are our greatest natural resource and that their education and commitment to service is the cornerstone of a strong and successful nation. With a mission to promote family and community, the Council for Youth Empowerment is continually striving for a brighter future and is well deserving of the $10,000 donation.

Throughout my pageant years I adapted a healthy lifestyle, learning that a strong body equals a healthy mind. With a pageant title comes the responsibility to encourage others to live a healthy lifestyle trough fitness and nutrition. Thus sparked my interest for all things food and how to enjoy my favorite foods while living a healthy lifestyle. What Robin Eats has grown to be more than a fun hashtag to post under my food photos. What Robin Eats has become a platform to encourage everyone that eating healthy does not have to be boring! I am not sure that I would of discovered my passion for a healthy lifestyle if it weren’t for pageants.
